Dr. Joy Short completed graduate degrees in educational studies (PhD) and dietetics with a special emphasis in nutrition in physical performance (MS) from Saint Louis University. She is a registered dietitian with an undergraduate degree in dietetics from Bradley University and training through the dietetic internship program at Saint Louis University.
Dr. Short was former director of the Didactic Program in Dietetics and an assistant professor at Saint Louis University. She has experience teaching online courses for several institutions of higher education. Nutrition education and multiple intelligence theory were focal areas of her doctoral research. She served as co-principal investigator on a USDA grant involving the implementation of school-gardening and nutrition education within inner-city schools. Her career also includes serving as the Team Nutrition Project editor for the Colorado Department of Education, an outpatient dietitian at a hospital, and a community dietitian in a health department.
